Today is National Beer Day and what a better way to celebrate than with a cupcake.
In this cupcake we used Guinness Stout, the perfect pairing with chocolate.
I was so excited to bake up these sweet treats for this special day.
I hope you enjoy them.
Here’s the recipe if you would like to make some for yourself.
Ingredients
Cupcakes: 1 1/2 cups of granulated sugar
1/2 cup of packed brown sugar
3/4 cup of Unsweetened cocoa
2 cups of all-purpose flour
1 tsp. baking soda
1/8 tsp. salt
1 bottle of Guinness
1 Tbs. vanilla extract
1 melted stick of unsalted butter
3 eggs
1 cup of sour cream
Frosting: 1 (8oz.) package of softened cream cheese
1 cup of heavy whipping cream
1 pound of powdered sugar
1/2 tsp. of vanilla extract.
Directions: Preheat the oven to 350 degrees
Whisk together the sugar, cocoa, flour, baking soda and salt in a bowl
In a separate bowl, pour the Guinness, melted butter and vanilla.
Add in the eggs and mix together, then gently add the sour cream and mix again.
Once the sour cream is completely incorporated then add the flour mixture stir until everything is combined.
Now scoop the cupcake batter with an ice cream scoop into cupcake pan lined with cupcake papers.
Fill the liners about 3/4 full of batter.
Bake for about 20 minutes.
Remove from the oven and cool completely.
While the cupcakes cool, prepare the frosting.
Put the cream cheese in a medium sized bowl and beat with a hand mixer until light and fluffy.
Slowly add the heavy cream and then the powdered sugar.
Once the frosting is creamy and smooth, scoop the frosting into a decorator bag and snip the end.
Now just pipe the icing onto the cooled cupcakes and top with chocolate shavings.
It is just that simple.
